I'm almost done with the book and they still haven't come back yet. and if they don't I'm going to be really mad! and if they do come back does it explain where they went and all that jazz?

Yes they come back and it explains everything. She was looking for more Hybrids, but she didnt want Bella's face to give it away or Edward to know that way Aro had no way of knowing. The address for the fake Documents was just a precaution in case Nessie needed to run

Honestly I expected a main character of some kind to die.. even though that would be horrible!!!
